I recall trying to make an all-natural Minion birthday cake for my youngest's 2nd birthday -- everything went well, except for when I was trying to make blue-coloured icing.

Blueberry juice: I never tried it in cakes but in my view it won't be enough to achieve the desired colour intensity in a cake. It might be a good solution for frostings and smoothies. Rather like fairy cakes, the flavour of these small butterfly buns should be classic. Original recipes don’t even include vanilla extract. Think along the lines of chocolate butterfly cakes or perhaps orange or lemon butterfly cakes. This cake is based on my Snow White Swiss Roll Cake, which is a light and fluffy chiffon style cake. Vanilla extract/ vanilla bean paste:traditional recipes do not list vanilla as an ingredient. However, vanilla butterfly cakes really are a delight. Once the cakes are ready consider adding a final flourish of decoration using sweets or sprinkles. Mini Smarties or Jelly Tots work a treat for kids (though the latter worked even better before Rowntrees suddenly make this sweet larger – where was the logic?)

Add a little of the beaten egg to the butter mixture, then whisk again. Gradually add the egg, little by little, whisking after each addition. It’s important to go slowly here, as adding too much egg at once can cause the mix to split. If it does split, simply add a tablespoon of the flour and whisk until the batter is smooth again. Similarly to the Red Velvet Cake, you can sprinkle on top crumbs from the trimmed layers. I mixed them with some more butterfly pea powder for additional colour intensity. Blue Spirulina is another possibility. The colour intensity of the spirulina powder is a bit stronger than the Butterfly Pea. Start with 1 teaspoon added to the flour. If the final colour of the batter does not look perfect, you might add also another ½ -1 tsp. The Blue Velvet Cake is seriously tasty and pretty! It doesn't really need too much decoration: it looks beautiful with just the frosting on top. For those who find buttercream just too sweet for their tastes, try filling that cake hole with a swirl of whipped cream. I’d say definitely include a drizzle of jam in this instance.

Either way, you can also play around with the recipe volume on your own to create a desired height by increasing the ingredients in proportion to your pan size. I never worry if I make a little extra filling, etc. since you can always freeze it in small silicone cupcake moulds on the side and have a bit extra dessert that way. It’s very easy to turn these buns into chocolate fairy cakes. Simply replace 30g of the flour with cocoa powder and proceed with the recipe as normal. Anyways, I'm pleased to say that this cake was a hit. My youngest scarfed down half of the cake and left two slices for his brother, and 1 for his Dad.

Essential kit

Use only butter for the buttercream (the clue is in the name). Frosting made with butter is so much tastier than that made with margarine. This cake is quite easy to make but if you are a novice baker, you should consider few important moments: Add a splash of lemon juice (1-2 teaspoons) to the buttercream and consider piping a line of zesty lemon curd down the centre of each bun – zigzigs look great.
