The particularity of these eaux-de-vie is the slow ageing process in damp British cellars until they reach full maturity.

Here, the aim is not to mask the flavours with dominant woody tones, but to enhance them as part of a delicate exchange between the eau-de-vie and oak staves. The house of Hine stands on the banks of the River Charente and, it is in its dark, ancient cellars that their unrivalled collection of cognac reserves gently age in mature oak casks under the supervision of Hine's Cellar Master, Eric Forget. Hine owns 80 acres of vines in Grande Champagne that supply 20% of their Grande Champagne needs, allowing a strict control from field to bottle. Lively notes of ripe apricot and yellow fruits are combined with an intense nose of flowers and mild spices.With flavours of ripe apricot, succulent melon and roasted nectarine, this Cognac is best enjoyed neat but works equally well in classic and celebratory cocktails. A terrific Cognac from Hine, Rare is classed as Fine Champagne, meaning that the eaux-de-vie used are all from the Grande or Petite Champagne areas, with at least 50% from Grande Champagne. All the elements of this sophisticated liquid have been aged for more than a decade, developing hints of chocolate and baked apple, and aromas of spices and liquorice. It's light and fresh with floral notes of jasmine, acacia, iris, apricot and vanilla and it's velvety smooth on the palate.
